Alternative title: How I know I’m Dating the Right Guy

CJ had the day off on Friday and when I asked him what he wanted to do Friday night, he said:

“I want to make an apple pie”

Is he a man after my own heart or what?  I couldn’t think of anything I’d rather do than stay in a make an apple pie.  This may be why a lot of my friends call me a grandma…

A couple of our friends work at an awesome bakery, so we enlisted our friend John’s help in making the perfect pie crust.

His recipe:

1.5 cups flour

1/2 cup butter

1/2 cup shortening

1/2 teaspoon salt

enough ice water to get the right consistency

John even gave me some tips for rolling out the dough.  Turns out, I was using way more energy than necessary. He taught me that all it takes is a series of  two quick rolls then a quarter turn of the dough until its flat and even!

I would give you a recipe for how we made the filling, but we honestly just made it up.  We combined the apple slices with cinnamon, sugar, brown sugar, lemon juice, cloves, and nutmeg.  Even the raw apple slices tasted delicious in this coating, I stole a few!

Next, I learned a fun little trick to make a fancy looking crust.

After you put the crust top on, you use a butter knife to slice off the excess.  Then you make the curvy design by pinching the dough around your index finger and your thumb, and going around the pie.

I made a little apple design with the leftover dough to put in the middle of the pie.  We cut ventilation slits in the top, and covered the crust with an egg wash.  The egg wash gives the pie a shiny finish.

Finished product! Viola!
